I&#8217;ve gotten request for zucchini loaf from Eating Light, Eating Right. I&#8217;ve modified it somewhat to fit my style better (and not be in flagrant disregard for the copyright), <\/p>\n<p>Wet: 1 egg, 1 egg white, 1\/4 cup veg oil, 1\/4 plain yog, 1\/4 cup honey, 1 bag vanilla sugar<br \/>\nDry: 1 1\/2 cups flour, 1 tsp baking soda, 1 tsp ground cinnamon, 1\/4 tsp salt<br \/>\nVeggies: 1\/2 carrot, 1 cup zucchini, 1\/2 cup raisins<\/p>\n<p>Mix wet a little bit, mix dry, mix both, add veggies. Bake at 370F (175C) for an hour.<\/p>\n<p>I am still not too sure I got it right. I think I will replace vanilla extract that I&#8217;ve used before with vanilla sugar and perhaps experiment with more veggies&#8230; There is another loaf that I&#8217;ve made with apples and dry cramberries that was good too, but I need to add many more apples than the recipe asks for next time.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I have been making dessert loafs lately.
