{"id":908,"date":"2011-11-26T20:40:24","date_gmt":"2011-11-27T00:40:24","guid":{"rendered":"http:\/\/www.bojnberry.ca\/~boj\/blog\/?p=908"},"modified":"2021-02-10T15:42:51","modified_gmt":"2021-02-10T19:42:51","slug":"poppy-seed-cake","status":"publish","type":"post","link":"https:\/\/www.bojnberry.ca\/~boj\/blog\/?p=908","title":{"rendered":"Poppy seed cake"},"content":{"rendered":"<p><a title=\"CIMG7930 by bojnberry, on Flickr\" href=\"http:\/\/www.flickr.com\/photos\/bojnberry\/6397064269\/\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/farm8.staticflickr.com\/7163\/6397064269_6052bec4e8.jpg\" alt=\"CIMG7930\" width=\"500\" height=\"375\" \/><\/a><\/p>\n<p>Cake:<\/p>\n<p>6 egg yolks<br \/>\n1 cup of sugar (200g)<br \/>\n3 packets of vanilla sugar or 1 tsp of vanilla extract<br \/>\n1 tsp of baking powder (7g)<br \/>\n1 cup raisins (80g)<br \/>\nzest of one lemon or orange<br \/>\n1 tbsp juice of one lemon or orange<br \/>\n1 tbsp ground oats or bread crumbs<br \/>\n1 and 1\/3 cup unsalted softened butter (150 g)<br \/>\n6 egg whites<br \/>\n1 and 1\/2 cups of ground poppy seeds (250g)<\/p>\n<p>Set the oven to 300F (150C)<br \/>\nSoak raisins in water.<br \/>\nMix egg yolks with sugar, vanilla and baking powder. When it becomes foamy, mix in butter, then oats, zest and juice.<br \/>\nDrain raisins and add them to the mixture.<br \/>\nIn a clean bowl beat egg whites until peaks form. Blend in poppy seeds then the contents of the first bowl.<br \/>\nBake for 45 min or until stick comes out clean. After taking out of the oven, cover with cloth or napkin so it can cool slowly.<\/p>\n<p>Ganache:<\/p>\n<p>sour jam (I use four fruits by Bonne Mamman, but could be anything)<br \/>\n1\/3 cup sugar (60g)<br \/>\n2 tbsp milk<br \/>\n3 oz chocolate (80g)<br \/>\n4 tbsp butter (50g)<\/p>\n<p>In a saucepan over the stove melt sugar in milk. Add chocolate and stir until it is melted. Remove from fire and blend in butter until it is melted.<\/p>\n<p>Cover the cake with a layer of jam and then spread ganache.<\/p>\n<p>The cake is best if kept in closed container in the fridge.<\/p>\n<p>P.S.
